January is usually the time for new gym memberships, healthy eating and an underlying feeling of guilt for the calories consumed over Christmas. But we’re saying to hell with that and telling you about some delicious vegan chocolate cakes for National Chocolate Cake Day on the 27th January. We hope you enjoy!

The first bake we have for you are these mouth-watering vegan chocolate lava cakes. They are made from a gooey centre, surrounded by a spongey chocolate sponge which is a great combination. They are made from sugar, baking powder, cocoa powder, dairy-free milk, vanilla extract, coconut oil and about 2 squares of dairy free chocolate to add that extra bit of chocolate-y goodness. They can be made in around 20 minutes and will serve 2.

This luxurious cake features hazelnut shards, a luscious chocolate ganache drip, chocolate icing and of course some truffles for the top! It can be made in around 2 hours and will serve 12.

Third on our list we have this beautiful vegan chocolate and beetroot layer cake with cacao fudge frosting. It’s made using some vegan favourites including avocado and beetroot to create a cake with an amazing texture as well as appearance. The colours are particularly pleasing to the eye. It can be made in around 2 to 3 hours and will serve 12 to 15 people.

Vegan German Chocolate Cake

The last bake we have on our National Chocolate Cake Day blog is this decadent vegan German chocolate cake. In our opinion, the best thing about this cake is definitively the coconut pecan filling which is sandwiched between rich chocolate cakes with a chocolate buttercream iced top. This cake can be made in around in 45 minutes and will serve 12.
