5 Cakes To Get You Through Veganuary

With the festive period coming to an end, many people are starting to think about their new year’s resolution for 2018. With more and more people taking up the vegan lifestyle, people trying veganism will undoubtedly be one of the most popular resolutions of the new year.

That’s why we here at Baking Time Club have come up with a list of 5 top cakes to help you get through the month of Veganuary (No eggs, milks or butter in sight!).

 

Gluten Free / Vegan Red Velvet Cake

The first cake on this Veganuary spectacular is this amazing vegan and gluten free Red Velvet Cake. Just like the non-vegan version this cake is made up of a light and fluffy vibrant red sponge and finished off with a sweet cream cheese layer of icing on top. This particular recipe can be made in 35 minutes and serves 8 people.

 

Vegan Carrot & Beetroot Cake with Cashew Frosting

Next up we have this vegan carrot & beetroot cake with cashew frosting and it is delicious! It is simple to make as it requires no actual baking and even better it is also gluten-free and suitable for paleo diets. This recipe can be made in 25 minutes and serves 16 people.

 

Vegan Vanilla Cake

The third cake in our Veganuary special is this incredible vegan vanilla cake. This beautiful recipe is light and fluffy and incredibly easy to make. It’s also pretty hard to tell it is a vegan recipe due to its rich and creamy flavourings. This recipe can be made in around 50 minutes and serves 12 people.

 

Vegan Chocolate Caramel Popcorn Cake

The penultimate bake in this blog is this vegan chocolate caramel popcorn cake and it is jaw-dropping! Although this recipe is quite time-consuming as well as being pretty unhealthy, it is definitely worth it if you’re are feeling like treating yourself. The cake is made of a 4-layer chocolate sponge with caramel butter cream and then covered in a caramel sauce and decorated with toffee popcorn. This recipe can be made in around 1 hour 20 minutes and serves 10.

 

Vegan Coffee Cake

The final recipe in this week’s blog is this vegan coffee cake. This recipe is incredibly moist with the coffee icing on top making it insanely good to eat with a nice hot cup of coffee. It can be made in around 45 minutes and serves 10.
